Apple Nut Bread Pudding

Directions:

Place cubed bread in a greased 13x9" baking dish.  Press down.  Spread apple pie filling on top.  Top with pecans.  Using an electric mixer, mix eggs and sugar well.  Add cream and milk.  Mix in vanilla, cinnamon and cooled melted butter.  Mix well.  Pour over bread mixture.  Set baking dish in a water bath.  To do this, place the baking dish with pudding in it into a larger dish.  Then, pour enough hot water into larger dish to come 1/2 up the side of the pudding dish.  Place in a 300° oven and bake for an hour or until a fork comes out of the pudding clean.  Serve warm with fresh whipped cream or vanilla ice cream.

  • 1 loaf French or Italian Bread (cubed)
  • 1 can apple pie filling
  • 1 to 1 1/2 cup pecans (chopped)
  • 2 cups heavy cream
  • 2 cups whole milk
  • 4 eggs
  • 1 cup sugar
  • 4 tablespoons melted unsalted butter (cooled)
  • 1 1/2 teaspoons vanilla
  • 2 tablespoons ground cinnamon
