Curried Chicken Salad

Directions:

Poach chicken until juices run clear. Cool and mince to desired consistency. In a large bowl, mix chicken, celery, onions, pecans, relish, grapes, and apples. Add 3 tablespoons of brown sugar and 1/2 teaspoons of curry powder. Add mayo and mix well. Salt and pepper to taste.

Ingredients

  • 4 large chicken breasts
  • 1/4 cup finely chopped celery
  • 1/8 cup green onions
  • 1/2 cup chopped pecans (toasted)
  • 1/4 cup sweet pickle relish
  • 1/2 cup red grapes quartered
  • 1/2 cup chopped red apple
  • 1/2 teaspoon curry powder
  • 3 tablesppons brown sugar
  • 1 cup homemade curried mayonnaise
