Pound Cake

Directions:

Cream butter, Crisco and sugar. Add eggs one at a time. Beat well. Alternate flour and milk. Beat slowly until well mixed. Grease and flour tube pan. Bake 1 1/2 hours on 300°. Make frosting by beating sugar, lemon juice and lemon rind together. If frosting is too thin, add more sugar to thicken.

Ingredients

Cake:

  • 1/2 lb butter
  • 1/2 cup Crisco
  • 3 cups sugar
  • 7 large eggs (room temperature)
  • 1 1/2 teaspoons salt
  • 3 1/2 cups Swansdown cake flour
  • 3/4 cup milk
  • 4 teaspoons lemon extract
  • 1/4 teaspoon almond extract (optional)

 

Frosting: (or use your favorite cream cheese icing)

  • 1 1/2 cups 10x powdered sugar
  • 4 tablespoons lemon juice
  • Grated rind of one lemon
